Savory Mashed Potatoes

Peel and cut two pounds of white potatoes into chunks. Boil in a pot of water until soft, then drain. In a large sturdy bowl, add 2 tablespoons or so of cashew butter, 1/4 cup nutritional yeast, a couple cloves of roasted garlic, a tablespoon of lemon juice, a tablespoon of apple cider vinegar.  Mash with a potato masher, adding a little unsweetened plant milk as you go to thin potatoes to desired consistency. Season with salt and pepper.
